The restaurant is built by three individuals with three different stories – united by one shared ambition: to create a place you never want to leave. Primero is where tapas are made to share, where cocktails matter as much as the kitchen, and where hospitality feels like visiting a dear friend or family.

In the kitchen stands José Antonio García Cumbreras – shaped by a Spanish food-heart and sharpened through culinary environments from Glasgow and London to Malta and Copenhagen. José has been sous chef, head chef and executive chef, opened restaurants across Europe, and now brings his full experience and heritage into Primero. The result: refined Spanish plates and tapas with depth, balance and character – rustic roots, modern technique, and flavours that make shoulders drop.

On the floor and in the kitchen you’ll also meet Morten Bech Køster, who for nearly four decades has carved his own path in Danish gastronomy as chef, head chef and restaurateur. Early in his career he worked under Jean Pierre Bruneau’s 3-Michelin-star kitchen in Brussels, cooked for President Mobutu in Zaire, returned home as the first Danish chef at Kong Hans, and spent two decades on Østerbro – first as head chef at Le Saint Jacques and later 17 years as restaurateur at No. 1 Aarhusgade. Morten’s hospitality is calm, present and precise to the fingertips, and his Belgian and classical French background influences the menu at Primero, where No. 1 classics like the Snickers dessert and the foie gras burger Mac Køster will reappear.

Behind the bar reigns Bayedy Ousman Sey, whose road to Denmark passed through Scotland, Switzerland, The Gambia – and even a private yacht. Bayedy has managed bars and opened a cocktail and wine bar in a helicopter-placed container on the banks of the Rhine in Basel. At Primero he builds flavour in layers, mixes with precision, and sends out cocktails that prolong the night and make the dishes shine even brighter. His bar is international in expression and deeply personal in style.
